Photo: Eggs from Pennsylvania purchased at the Del Ray farmer’s market. The eggs are smaller than average because they are from hens just starting to lay.

Photo: Freshness you can see in the tight white and yolk.
Saturday morning: we scrambled these eggs and ate them with potato hash and homemade English sausage (from Steve, the butcher in Del Ray).

The eggs that we bought this week were tiny as well. Thanks for explaining that it’s because they are from young hens. Your Saturday morning breakfast sounds delicious!
Madam says: Happy Spring! I can’t say for sure that all small eggs come from young hens (some Googling is obviously required here), but that was the explanation given to us for the eggs we bought last Saturday.
